Salty muffins with filling. Unsweetened cupcakes, muffins, scones. Snack cake with eggplant

It seems that there are no people in the world who do not like sweet cupcakes. Soft melting dough, an abundance of candied fruits and spices, festive taste - best dessert you can't imagine anything like it for evening tea. But you can move away from the usual way of looking at things. And if you put meat filling inside and serve the dish in the morning, it will become a nutritious breakfast. Or if you “hide” spinach, which children don’t like, in a muffin, they themselves will ask for more.

And so, the hit five of the most delicious basic recipes for savory muffins and several ideas on how to diversify them.

Muffins with hot cheese and sweet peppers

The inventor of this cheese bomb says it was created... by mistake. They just put too much cheddar in the dish. But it turned out that this proportion gives a delicate consistency, average between dough and custard.

Mix one and a half cups of flour with 2 tsp. baking powder and 1 partial tbsp. l. sugar, add a little salt - this is a mixture of dry ingredients. Now wet: 1 cup milk, quarter cup melted margarine, 3 cups grated sharp cheese, large Bell pepper, cut into cubes (the brave ones can also decide on chili), 1 egg. Combine both ingredients, mix thoroughly, bake portioned cupcakes for about 25 minutes.

For a milder taste, you can take mild cheese and replace the pepper with an apple or canned pineapple.

Vegetarian muffins made from ready-made bread

This recipe will be appreciated not only by those who have given up meat, but also by those who want results with a minimum of effort. Here the dough has already been made for us, so all that remains is to prepare the delicious filling.

Grind the stale loaf (in small cubes). Chop 1 onion, 3 apples, 4 celery stalks. Chop half a cup of fresh herbs (parsley, thyme, rosemary, sage). Chop 2 pickled cucumbers, carefully drain the brine.

Stew the onion in vegetable oil, add apples, celery, and herbs. After 5 min. add 2 cups of water and keep for a couple more minutes. Add the stewed mixture and cucumbers to the bread, mix, trying not to destroy the cubes, season with salt and pepper. Place in molds and bake until crispy.

Varying the greens changes the taste. In addition, instead of cucumber, you can take any sour component (cranberries, dried cherries, unsweetened dried apricots, soaked apples, etc.).

Healthy muffins with cheese and spinach

Checked: adults and kids fight for these cupcakes. Such pastries are suitable to give to a schoolchild - unusual, nutritious and according to the rules of healthy food.

We make a simple dough from 2 eggs, one and a half cups of flour, the same amount of milk, melted margarine (a third of a pack) and 1 tsp. baking powder. Add a little salt. Add a finely chopped bunch of spinach leaves and 150 g of cheese. Unfold and bake for half an hour until golden brown.

This recipe is a godsend because it gives room for experimentation. Instead of spinach, substitute broccoli, peas, mexican mix, sautéed cauliflower or white cabbage, and feta cheese can be replaced with feta, mozzarella or other soft cheese, including cream cheese.

Ham muffins

A very “masculine”, satisfying option, rich in protein. If you need to recharge for the whole day or want to have a hearty snack after work, this is a good choice.

For the dough, combine 2.5 cups of sour cream, 1 tsp. baking powder, one and a half cups of flour and 1 egg. As a filler we will have 200 g of ham and 3 crumbled hard-boiled eggs. Knead everything together, put it in molds, put half an olive on top and bake for about 20-25 minutes.

Use as a filling any meat or fish salad left over from yesterday with mayonnaise (yes, Olivier will also work). Then slightly reduce the amount of sour cream.

Versatile snack muffins

The leader of the hit parade is a leader because it contains a base recipe for all occasions, and you can fill it with anything.

Half a liter of kefir (sour milk), soda and salt on the tip of a teaspoon, 100 g of soft butter, 2 eggs, 10 tbsp. l. flour. From this set we prepare liquid mixture. Pour a little dough into the bottom of the mold, put a couple of spoons of filling and put a little dough on top again. Sprinkle with sesame seeds and cook in the oven for about half an hour.

The filling can be minced meat, chicken, mushrooms, stewed vegetables, fish, crab meat, eggs, liver - there are a million options. Instead of sesame seeds, poppy seeds, chopped nuts or any seeds are suitable.

You can make not portioned baking, but a full-fledged cupcake in a large form. In this case, the cooking time is doubled.

The dough is baked when the blade of a knife inserted into it remains clean and dry. For muffins, use a toothpick for the same purpose.

Dumplings for borscht

Ingredients:
Dough:
● Warm water 1 glass
● Sugar 1 tbsp. l.
● Yeast (dry, fast-acting) 1 pack. (11 g)
● Flour ≈ 3 cups
● Vegetable oil 3 tbsp. l.
● Salt 1/2 tsp.

Additionally:
● garlic
● greens
● vegetable or melted butter

Preparation:
Combine the yeast, warm water, sugar and flour in a bowl, mixing first with a whisk or spoon to dissolve the yeast better, and only then add the butter. The point is that if vegetable oil immediately falls on the yeast, the dough will take a very long time to rise. Knead the dough to a good elastic consistency. It should not and will not stick to your hands, then place it in a bowl in a warm place and cover with a towel. Let rest for 20 minutes to an hour depending on how the dough rises.
Then form balls and place them on a baking sheet with parchment. If you place them at a distance from each other, then each donut will turn out separately like a bun; you can place them side by side, and when baked, separate them, and there will only be a crispy top.
Dumplings are baked at 180° until golden brown.
Grind the garlic in a garlic press and mix with vegetable oil, one to one, salt the mixture to taste. Chop the greens.
When you take the donuts out of the oven, cover them with a damp towel for about 3 minutes so they can rest, but you don’t have to do this. Then brush with garlic mixture and sprinkle with herbs. Do not spare any mixture or greens so that the donuts are not dry. They turn out incredibly aromatic and tasty, especially with hot borscht.

Flavored cookies for soup

These cookies are a great addition to any soup. And what a wonderful aroma of Provençal herbs and baked potatoes will fill your kitchen when you put it in the oven!

Ingredients:
potatoes (boiled) - 250 g
cheese (hard) - 70 g
Provencal herbs - 1 tsp.
egg yolk - 1 pc.
flour - 70 g
semolina - 45 g
butter - 70 g
salt to taste

Boil the potatoes. Grate the cheese on a coarse grater.
Also grate the cooled potatoes, mix with cheese, then beat in the egg yolk, salt and add a mixture of Provençal herbs to taste (I add a heaped teaspoon). Herbes de Provence can be replaced with rosemary.
Add softened butter into the dough.
Add semolina and sifted flour. Knead a soft, loose dough, roll into a ball, wrap in cling film and place in the refrigerator to rest for 20 minutes.
It is better to roll out the dough on a silicone mat (as it is quite sticky), lightly sprinkled with flour. Roll the sausage with your hands, which is then divided into flat cakes.
Lightly sprinkle the flatbreads with flour and fold them one on top of the other. Then cover with parchment and roll out with a rolling pin into a layer of 5-7 mm.
Cut the dough into cookies of the shape you like best.
Place the cookies on a baking sheet lined with parchment or on a silicone mat.
Bake in an oven preheated to 180° for 20-25 minutes until browned. It is important to catch the moment when the cookies begin to “golden”. If you keep it in the oven, it will be crispy, but, in my opinion, a little dry. I take the cookies out when they are still slightly soft; after they cool, they will harden a little on their own.
By preparing these cookies and serving them with soup, you will diversify and decorate your regular lunch!

Homemade Pringles chips

Ingredients:
Potatoes (large) - 3 pcs.
Butter - 30 g
Oat flakes - 100 g
Flour (how much dough will take) - 5 tbsp. l.
Spices (for example, mushroom seasoning, suneli hops and paprika)
Egg - 1 pc.
Yeast (dry, less than half a teaspoon) - 2 g

Preparation:
Boil the potatoes as if for mashed potatoes.
Drain all the water, puree it, adding butter, mushroom seasoning and spices (except for paprika, we sprinkle it on the finished chips at the end).
At the same moment, dilute a little yeast with warm water and leave for 5 minutes.
Let's take it cereals(sugarless!). Grind into flour in a blender.
Add oatmeal, egg, yeast and wheat flour to the cooled puree. Knead the dough, which is not too stiff; it should even stick to your hands a little. Leave to rest for 20-30 minutes.
Place baking paper on the table, grease it with vegetable oil, take a piece of our dough and sprinkle a little flour on top.
Knead the dough slightly onto the paper, cover with cling film and roll out into a thin layer with a rolling pin.
Remove the film and use a glass to make circles.
In a deep frying pan over high heat, heat the sunflower oil (pour in sparingly, as for deep-frying) and fry our circles! They fry very quickly, literally 10-15 seconds on each side. The main thing is not to overcook, otherwise the taste will be lost.
Those who want to get a completely diet version of Pringles can put the circles directly into the oven on baking paper (this is exactly what I did with the first batch of my chips) and brown them until crisp. It also turns out very tasty. But deep-frying, of course, still tastes better))
When the chips are ready, sprinkle with paprika.

This snack muffin recipe is quite simple, you can change the ingredients depending on what you have in the refrigerator. It really helps when guests come unexpectedly. I looked into the refrigerator, collected everything I had, quickly kneaded it and voila!, the table was set)

You can also make these cupcakes for your child to take to school or take them to a picnic.

Ingredients:

  • Egg – 1 pc.
  • Mayonnaise – 1 tbsp.
  • Sour cream – 1 tbsp.
  • Flour – 1.5 tbsp.

For filling:

  • Ham – 200g,
  • Eggs – 3 pcs.,
  • Mayonnaise - 100g,
  • Olives - to taste, but can be replaced, for example, with pickled cucumber.

How to make snack cupcakes

I immediately prepare the filling. I boil eggs hard. I cool, peel and cut into cubes, as for Olivier salad. I cut the ham into the same cubes, it is better to cut the olives into circles. If you don’t have ham, you can make snack muffins with sausage or meat. I mix everything and season with mayonnaise. It turns out to be such a salad. If there is Olivier salad left after the holidays, then I think it can be used instead of filling.

Then you can start preparing the dough.
I mix eggs, mayonnaise, sour cream together and add flour and knead the dough. The dough should not be completely liquid, but not thick either.
Now take the molds and put a little dough on the bottom, the prepared filling on the dough, and put a layer of dough on top again with a spoon. Now you can bake in the oven at 180° until done.

If you don’t have muffin tins, you can bake a large pie in a frying pan using the same method, it will also be delicious. Try it and write how you liked it?

And here is another version of snack muffins, but with seafood. It will also be delicious with salted fish, by the way, I told you.

Sometimes, instead of the most delicious slice of bread or your favorite baguette, you want something new. An appetizing alternative is snack cupcakes, which, if served correctly, can become a separate dish.

Snack cake with eggplant

Ingredients:

  • Eggplant (medium) - 1 pc.
  • Cherry tomatoes - 10 pcs.
  • Chicken egg - 2 pcs.
  • Olive oil - 8 tbsp. l.
  • Flour - 2/3 tbsp.
  • Baking powder - 1 tsp.
  • Dried oregano - to taste
  • Salt - to taste

Preparation:

Cut the eggplant into slices (0.5 cm thick), sprinkle with salt and leave for 20 minutes to remove moisture and bitterness. Next, rinse off the salt and squeeze out the eggplants.

Heat half the oil in a frying pan and fry the eggplant slices on both sides until golden brown. Then dry them on napkins and then cut them into thin strips.

Beat the eggs with salt, a pinch of oregano and the remaining olive oil. After mixing the flour and baking powder, sift it into the egg mixture. Cut the tomatoes in half and remove the seeds. By the way, you can use regular tomatoes instead of cherry tomatoes: it is important that they are firm. In this case, remove the seeds and excess liquid from them and cut into cubes. Mix the dough with vegetables. If the mass is too thick, you can add 1.5 tbsp. l. water or milk.

Grease the prepared pan with oil and fill it with dough (at the rate of 2/3 of the volume of the pan). Sprinkle oregano on top. Bake in the oven at 180 degrees Celsius for about 30 - 35 minutes.

You can change the serving form by preparing portioned muffins instead of a whole cupcake. In this case, reduce the baking time by 10 minutes.
