Cabbage rolls are a fairly famous dish in the Middle East and Europe. The classic recipe for cabbage rolls assumes that it is minced meat mixed with rice, wrapped in cabbage (or grape) leaves, stewed or boiled (the leaves are also stewed or boiled). There are many culinary variations of this dish.

Methods for preparing cabbage rolls

There are many ways to prepare cabbage rolls. So, in Turkey they make the so-called “dolma” and “sarma”. Sarma is a filling of rice, olive oil, raisins, pine nuts, salt and spices (mint, ginger, cinnamon, black pepper). They roll it with grape leaves (pickled), thinly - the thickness of a finger, and stew it like ordinary cabbage rolls. In principle, if you do not then pour it with a mixture of olive oil and lemon juice (in which it is infused while it cools), it can be considered dolma (although they try to make sarma smaller and thinner). Dolma in general is the collective name for cabbage rolls in the Middle East and Central Asia. Its difference from cabbage rolls is that it does not necessarily contain minced meat, but the leaves in which it is wrapped are always grape leaves.

Another subtype of cabbage rolls recipe is lazy cabbage rolls. They are prepared from finely chopped cabbage mixed with minced meat, rice, onions and carrots (optional). This minced meat is used to form cutlets, which are then fried, stewed or baked. The second option is to place minced meat and cabbage leaves in layers into a mold and bake. It turns out to be a meat casserole with cabbage. The advantages of this recipe are the speed of preparation (the most labor-intensive step is skipped - wrapping the minced meat in cabbage) and the fact that you can no longer leave the cabbage on the plate after eating only the minced meat. The disadvantages of this recipe are that you cannot prepare raw cabbage rolls for future use (by freezing them in the freezer) and the loss of aesthetics of the dish.

Traditional cabbage rolls recipe

Here is the basic recipe for cabbage rolls, as well as some nuances of their preparation.

Stuffed cabbage rolls are traditional, made with minced beef (or chicken), with rice and onions. Ingredients:

  • 500 grams of minced meat (you can use any kind, but lean beef is better);
  • 2\3 or 1 glass of rice (preferably round);
  • average head of cabbage – 800 grams (it is better to take loose cabbage);
  • onion, seasonings, salt, herbs - to taste;
  • a glass (or more if without sauce) of water;
  • sour cream and a couple of tablespoons of tomato paste for sauce - optional.

Preparing cabbage: leaves are cut from fresh cabbage (with a knife at the base), and then lowered for 2-3 minutes in boiling salted water. After that, the longitudinal vein is removed from the leaves with a knife, cutting off the protruding part, or they get rid of its hardness by beating it and rolling it with a rolling pin.

When rolling the meat, add a raw onion to the minced meat, if it is not purchased. Then mix the minced meat with spices, salt and rice. The rice should not be raw, but not completely cooked; it requires 10 minutes of cooking.

The filling, usually a dessert spoon, is wrapped in cabbage leaves, taking into account the fact that the rice will swell and increase. There are ways to wrap cabbage rolls in an “envelope,” and there are regular tubes. The finished cabbage rolls are placed in a cauldron, in which the bottom is lined with discarded cabbage trimmings. This is to prevent the cabbage rolls from burning.

After the cabbage rolls are folded in layers, they are poured with sauce. The sauce consists of spices, fried onions and carrots, tomato paste, water and 200-500 grams of sour cream. There are recipes where there is no sauce, and cabbage rolls are filled with salted water. The cabbage rolls are stewed for about half an hour, it all depends on the minced meat. As soon as the minced meat and rice are ready, the cabbage rolls are considered ready.

Stuffed cabbage rolls are a decoration for any table, both festive and everyday. This is a very good and tasty dish, it can be classified as dietary. Let's calculate the calorie content of cabbage rolls (100 g of product). On average, the figure is 207 Kcal, where proteins are 5.6 g, fats are 18.3 g, carbohydrates are 4.8 g. Thus, we can say that this is one of the most appetizing folk dishes that will not negatively affect your figure. Place envelopes in a container, sprinkle each row with grated carrots, chopped onions and coat with tomato paste. Fill with water and simmer for 2-2.5 hours on low heat. Thus, it turns out that the calorie content of such cabbage rolls will be higher due to the tomato. Some people fry the carrots in advance, but then the envelopes turn out to be more greasy. This dish is not recommended for people with diseases of the digestive system.

Lazy cabbage rolls

Sometimes, even if you want to make envelopes, there is simply not enough time to prepare them. But I manage to please my loved ones with lazy cabbage rolls. This is a very tasty and quick dish. At the same time, lazy cabbage rolls (calorie content 300 Kcal per 100 g of product) are a dietary dish that includes many nutrients. Chop the cabbage very finely and then mash it with your hands until it releases juice. Place it in a deep frying pan, fill it with water and simmer covered for about 30 minutes. Meanwhile, place the minced meat in a frying pan, add water, salt, pepper and simmer for about 15 minutes. There we fry the carrots and onions in sunflower oil until golden brown along with the minced meat. The calorie content of lazy cabbage rolls increases due to the frying of all the products, but it turns out much tastier. Mix everything together with cabbage and simmer for about 20 minutes, add spices and tomato paste at the very end.

Meat cabbage rolls

Sometimes there is no minced meat, but you still want to try cabbage rolls; here I found a great solution. We take the meat, cut it into small pieces, then fry it in sunflower (olive) oil. Pour boiling water over the cabbage leaves and separate them from the head. Take a pan with layers of cabbage leaves, pieces of meat, carrots, onions and fresh tomatoes. Be sure to salt everything and add spices or herbs. Pour cream on top and simmer over low heat for about 45 minutes. The dish turns out surprisingly tasty and appetizing. Moreover, the calorie content of cabbage rolls with meat is no different from the calorie content of minced meat filling, even less.

  • - a medium-sized loose head of cabbage (800 g) is immersed in boiling water for 5 minutes until the upper leaves soften;
  • - then take out the head of cabbage, remove the finished leaves and lower it again into the water until the next layer is ready;
  • - minced meat is wrapped in leaves in the form of tubes or envelopes;
  • - prepared cabbage rolls are placed in a pan, the bottom of which is lined with unusable trimmings of cabbage leaves, poured with hot water, cabbage broth or sauce and cooked until tender.

To determine the calorie content of one serving of cabbage rolls, you should take into account the calorie content of each ingredient and its quantity used in preparing the dish.

As you can see from the recipe, the main component is minced meat, consisting of beef and pork. The calorie content of boiled beef is 254 kcal per 100 g, and boiled pork is 375 kcal per 100 g. This is followed by rice with a calorie content of 116 kcal and white cabbage - 27 kcal. Seasonings such as onions, herbs and spices will provide a total of about 30 kcal. Separately, you need to calculate the calorie content of the products that were used to prepare the sauce. Usually this is sour cream and tomato paste. Thus, by counting the amount of each ingredient and weighing the weight of the portion that ends up on your plate, you can easily determine the number of calories you are going to eat. On average, the calorie content of cabbage rolls prepared according to the classic recipe is 126 kcal, but this does not take into account the sauce. If we take this into account, the figure can reach 140 - 150 kcal.

Lenten cabbage rolls

There are different variations of cabbage rolls without meat. Therefore, both vegetarians and fasting people can enjoy this tasty and satisfying dish. Lenten cabbage rolls can be prepared with fillings of vegetables, mushrooms, as well as beans and lentils. Lenten cabbage rolls, whose calorie content per 100 grams is slightly less than those with meat, are an excellent dish for those who are watching their figure without denying themselves the pleasure of a tasty meal.

So, the calorie content of vegetable cabbage rolls with onions, carrots and mushrooms is on average 89 kcal per 100 g. And the energy value of lean, tender cabbage rolls with beans and lentils reaches 104 kcal. At the same time, in terms of the content of proteins necessary for the human body, lean cabbage rolls are almost not inferior to classic ones, and in terms of the content of dietary fiber they are much higher, which has a beneficial effect on digestion and intestinal transit, promoting regular cleansing of the intestines.

Lazy cabbage rolls

When you don’t want to spend a lot of time wrapping minced meat in cabbage leaves, and this is the most labor-intensive stage in preparing this dish, you can cook lazy cabbage rolls. Their distinctive feature is that the cabbage, poached in the same way as in the classic cabbage rolls recipe, is finely chopped and mixed with minced meat. Then cutlets are formed, which are fried, baked or stewed.

Another way to prepare this dish is a layer-by-layer casserole: minced meat and cabbage leaves are placed in layers in a mold and baked in the oven. The advantage of these two methods is significant time savings. The disadvantages are as follows:

  • - the aesthetic appearance of the dish is lost;
  • - it is impossible to prepare it for future use by freezing it in the freezer.

Don't forget about the calorie content: lazy cabbage rolls fried in oil are much more caloric than stewed or baked ones. Otherwise, there is not much difference between this variety of cabbage rolls and the classic recipe. On average, the energy value of lazy cabbage rolls is 149 kcal per 100 g.

Dolma with grape leaves

An eastern variety of cabbage rolls is dolma, in which grape leaves are used instead of cabbage. The authorship of this dish is currently disputed by Armenia, Türkiye and Azerbaijan. However, if you believe the historian and popularizer of cooking William Pokhlebkin, then the birthplace of dolma is Armenia, from where it migrated to the cuisines of the peoples of the region.

For all its satiation, cabbage rolls are a relatively low-calorie dish. Therefore, they are often included in the diet in various diets. In addition, the products from which they are prepared have very beneficial properties.

    Preparation:

    1. 1. Disassemble the head of cabbage into leaves. To do this, cut each one in the middle of the thick vein and remove it from the head of cabbage. Cut out the thick vein.
    2. 2. Place the leaves in boiling salted water for 8-10 minutes.

    For dietary lazy cabbage rolls you need:

    • chicken fillet (breast) - 350 g;
    • white cabbage - 130 g;
    • rice - 70 g4
    • egg - 1 pc.;
    • natural yogurt - 90 g;
    • tomatoes in their own juice - 300 g;
    • favorite greens - 1/2 bunch;

    Marinated cabbage rolls


    Marinated cabbage rolls with vegetables are served as a savory snack or a side dish for meat dishes. These include:

    • white cabbage - 1 kg;
    • carrots - 3 pcs.;
    • sunflower oil - 70 ml;
    • garlic - 2 cloves;
    • water - 500 ml;
    • granulated sugar - 100 g;
    • salt - 1.5 tbsp. l.;
    • table vinegar - 50 ml;
    • dried coriander - 1 tsp.

    Preparation:

    1. 1. Cut the head of cabbage near the stalk in four places to make the leaves separate more easily. Place in boiling water and boil for 10-15 minutes.

But on the other hand, it’s not so much the meat that gives cabbage rolls their calorie content, but rather the variety of sauces in which they are stewed (or boiled). In addition, the vegetable and mushroom version of the filling is a way to adapt the recipe for vegetarians (as well as fasting and fasting days). The calorie content of cabbage rolls with mushrooms is only 57 Kcal per hundred grams. In any case, the classic recipe is minced meat, rice, spices and cabbage. So, the recipe: 500 grams of minced meat, two-thirds of a glass (or a glass) of raw rice and an 800 gram head of cabbage. But there are also sauces. The following ingredients are supposed to be included in the sauce: 250-500 grams of sour cream, a glass of water, 2-3 tablespoons of tomato paste and seasoning. It is difficult to calculate the calorie content of the sauce, since in addition to the varying amounts of sour cream, it is also unknown how much sauce will end up in the dish. How many calories will there be in cabbage rolls without taking into account the sauce? A glass of rice (200 grams) yields 600 grams of boiled rice, which is 690 Kcal. 500 grams of minced meat is from 1750 to 1900 Kcal, depending on the fat content of the meat. The calorie content of cabbage is 25-29 Kcal per hundred grams, respectively, a head of cabbage is 200-240 Kcal. The total weight of the products is almost two kilos, or more precisely 1900 grams. If you divide the resulting number of calories by weight, you get about 150 kcal per hundred grams. The calorie content of the sauce is approximately 115 Kcal per hundred grams. If you average the calorie content of the sauce and cabbage rolls, it turns out that the calorie content of the cabbage rolls will be from 90 to 140 Kcal. Of course, the calorie content of cabbage rolls will vary depending on the proportions of the ingredients and the fat content of the meat. In some recipes, they are topped with sour cream immediately before serving, and stewed in cabbage broth, left over from the cabbage when it was lowered. There are several options for preparing cabbage for stuffing. According to the classic recipe, the cabbage is lightly boiled, taking out and removing the top leaves every five minutes so that the cabbage cooks evenly. Then the cabbage broth remains, which is then used for sauce. In different recipes, tomato paste and different amounts of sour cream are added to the sauce. Other recipes suggest lightly baking the cabbage in foil in the oven or in the microwave (without foil). In the latter case, it is also recommended to periodically remove and cut off the top leaves.

How many calories are in homemade cabbage rolls according to different recipes?

In addition to the classic recipe for cabbage rolls, there are many variations of the recipe. So, in Turkey they make the so-called “dolma” and “sarma”. Sarma is a filling of rice, olive oil, raisins, pine nuts, salt and spices (mint, ginger, cinnamon, black pepper). They roll it with grape leaves (pickled), thinly - the thickness of a finger, and stew it like ordinary cabbage rolls. In principle, if you do not then pour it with a mixture of olive oil and lemon juice (in which it is infused while it cools), it can be considered dolma (although they try to make sarma smaller and thinner). Dolma in general is the collective name for cabbage rolls in the Middle East and Central Asia. Its difference from cabbage rolls is that it does not necessarily contain minced meat, but the leaves in which it is wrapped are always grape leaves. The calorie content of dolma and sarma without meat is 65 Kcal per hundred grams, the calorie content of dolma with lamb is 165-180 Kcal per hundred grams.

Another subtype of cabbage rolls recipe is lazy cabbage rolls. The calorie content of lazy cabbage rolls is approximately the same as that of regular cabbage rolls, and depends on the proportion of ingredients. On average, the calorie content of lazy cabbage rolls is 147.8 kcal per hundred grams. Lazy cabbage rolls - the same deflated cabbage, finely chopped, mixed with minced meat, rice and onions with carrots (optional). That is, the same ingredients, but mixed. This minced meat is used to form cutlets, which are then fried, stewed or baked. The second option is to place minced meat and cabbage leaves in layers into a mold and bake. It turns out to be a meat casserole with cabbage. The advantages of this recipe are the speed of preparation (the most labor-intensive step is skipped - wrapping the minced meat in cabbage) and the fact that you can no longer leave the cabbage on the plate after eating only the minced meat. The disadvantages of this recipe are that you cannot prepare raw cabbage rolls for future use (by freezing them in the freezer) and the loss of aesthetics of the dish. In addition, with traditional cabbage rolls it is easier to visually determine the portion and not overeat. It should also be remembered that the calorie content of lazy cabbage rolls increases due to the oil in which they are fried (as is the case with other fried foods).

Traditional cabbage rolls recipe

Here is the basic recipe for cabbage rolls, as well as some nuances of their preparation.

Stuffed cabbage rolls are traditional, made with minced beef (or chicken), with rice and onions. Ingredients:

500 grams of minced meat (you can use any kind, but lean beef is better); 23 or 1 glass of rice (preferably round); average head of cabbage – 800 grams (it is better to take loose cabbage); onion, seasonings, salt, herbs - to taste; a glass (or more if without sauce) of water; sour cream and a couple of tablespoons of tomato paste for sauce - optional.

Preparing cabbage: leaves are cut from fresh cabbage (with a knife at the base), and then lowered for 2-3 minutes in boiling salted water. After that, the longitudinal vein is removed from the leaves with a knife, cutting off the protruding part, or they get rid of its hardness by beating it and rolling it with a rolling pin.

When rolling the meat, add a raw onion to the minced meat, if it is not purchased. Then mix the minced meat with spices, salt and rice. The rice should not be raw, but not completely cooked; it requires 10 minutes of cooking.

The filling, usually a dessert spoon, is wrapped in cabbage leaves, taking into account the fact that the rice will swell and increase. There are ways to wrap cabbage rolls in an “envelope,” and there are regular tubes. The finished cabbage rolls are placed in a cauldron, in which the bottom is lined with discarded cabbage trimmings. This is to prevent the cabbage rolls from burning.

After the cabbage rolls are folded in layers, they are poured with sauce. The sauce consists of spices, fried onions and carrots, tomato paste, water and 200-500 grams of sour cream. There are recipes where there is no sauce, and cabbage rolls are filled with salted water. The cabbage rolls are stewed for about half an hour, it all depends on the minced meat. As soon as the minced meat and rice are ready, the cabbage rolls are considered ready.

They are served with sour cream and herbs. Stuffed cabbage rolls are an independent hot dish; they do not require a special side dish. There are few calories in cabbage rolls, even including sour cream.
