Today was a nice sunny day! Just what you need for spring cleaning in the garden. Remove old leaves, trim branches broken during the winter, whiten the trees... There are a lot of things that need to be done after a long winter. It's time to plant flower seeds in a greenhouse for seedlings, and from early radishes and no one will refuse salad either.

In general, I didn’t have time to look back at work, and evening was already close. And there is nothing for dinner. What to cook? An eternal question for many women... What can you cook that will definitely be tasty and preferably quick. Firstly, a late dinner suits no one, and secondly, I myself don’t really want to stand at the stove for two hours.

The answer comes almost along with the question - chicken! Our Magic wand-lifesaver! Everything is always delicious with her. And of course, you can only cook an omelet or scrambled eggs faster than hers.

And so, it was decided, we prepare it. I open the refrigerator and see what I have there. Eating pickled cucumbers is great! This means that the dish can be prepared in an unusual way, and I hope it’s delicious. And there's broccoli in the freezer. Wonderful! I can already imagine what the dish will look like. And while I’m imagining it, I immediately begin to prepare the necessary products.

Chicken stew with vegetables and pickled cucumbers

We will need:

  • chicken thighs - 900 gr.
  • onion - 1 pc.
  • carrots - 1 pc.
  • pickled cucumbers - 2 pcs.
  • spices - cumin, coriander, rosemary, paprika
  • salt, pepper - to taste

Preparation:

1. You can use any part of meat, but I decided to use thighs. Wash them under running water and cut into medium pieces. Salt, pepper, sprinkle with spices. Rub them thoroughly into the flesh and skin. Let it sit for a bit while we do the vegetables.

2. Cut the onion into thin half rings.

3. Grate the carrots using a Korean carrot grater.

4. Cut the cucumbers into strips.

6. Place chicken in a frying pan, sprinkle onions, cucumbers and carrots on top. Pour 1/3 of a glass hot water. Place on low heat and cover with a lid.

7. Leave to simmer for 30-40 minutes with the lid closed.

8. Without opening the lid, turn off the heat and cover with a towel. Let stand for 15 minutes.

Nuances of preparation

  • You can use any meat: thighs, drumsticks, wings and fillets. It is advisable to use identical parts of the carcass. This is to ensure that all the meat cooks evenly.
  • If you use different parts of the carcass, then you need to slightly increase the cooking time.
  • As you may have noticed, we prepare the dish without using vegetable oil. We did not remove the skin, the fat from it will melt, and that will be quite enough. The fact that there is no oil is a plus!
  • We also did not pre-fry the bird; it is stewed from start to finish in its own juice. Vegetables also release juice. This is another plus - our dish is not only tasty, but also healthy.
  • Or you can remove the skin from the meat, then during the cooking process you need to add a little vegetable oil.
  • It is not advisable to open the lid during the entire cooking process. The dish as a whole is, as it were, steamed! Great, right?! The added water will prevent the meat from burning. The main thing is that the fire is small.

How and with what you can stew chicken

Broccoli on the side

We will need:

  • frozen broccoli 450-500 gr
  • garlic - 2 cloves
  • salt - to taste

Preparation:

1. While my chicken meat is stewing in a frying pan, I put a pan of water on the fire. Let it boil.

2. The water should be salted.

3. While the water is boiling, chop the garlic as finely as possible.

4. Once it boils, add the frozen broccoli to the pan. There is no need to defrost it first, otherwise it will become limp and lose appearance and color.

5. Bring to a boil. And cook at open lid 4-5 minutes. There is no need to close the lid so as not to lose the color and appearance of the cabbage.

6. Carefully, so as not to damage the inflorescences, drain the water. Better water Carefully drain directly from the pan. You can, of course, use a colander, but you don’t want to move the delicate cabbage inflorescences from dish to dish.

7. Add chopped garlic and carefully distribute it throughout the cabbage.

2. Place several pieces on a wooden or plastic board. Cover with cling film or cellophane and carefully beat with a hammer on one side.

3. Line a baking sheet or wide baking dish with foil and grease vegetable oil. Place the fillet pieces at a short distance from each other.

4. Salt the fillet, sprinkle with ground coriander or other spices.

5. Cut the cucumbers into thin slices. If the fillet pieces are small, then you can add half a slice of cucumber.

Krucheniki with pickled cucumber is one of the win-win ways to make chicken fillet soft and juicy. The preparations with a cucumber wrapped inside are stewed in sour cream and tomato sauce - it’s easy to imagine what a bright taste the ready-made krucheniki have. By the way, traditional cabbage rolls are usually stewed in the same sauce.

  • 3 tbsp. flour,

  • 200 ml water,
  • 3 tbsp. sour cream,
  • 1.5 tbsp. tomato paste,
  • 2-3 bay leaves,
  • spices for sauce.

Preparation

1. Wash a couple of chicken fillets, cut them slightly diagonally into small layers.

2. Place the fillet pieces on a board and cover them with cling film, beat them lightly with a hammer, more around the edges, to increase the area of ​​the piece.

3. Cut the pickled cucumbers into strips. If you use small gherkins, you don’t have to cut them.

4. Place one chop on the board, salt it and sprinkle with ground paprika; if you want it spicier, it’s better to use ground red or black pepper. Place a cucumber strip on the edge.

5. Wrap the cucumber in a roll, repeat the manipulations until the meat and filling are gone.

6. Pour flour into a saucer and roll the tortillas on all sides. Beat a couple of eggs in a bowl and dip the tortillas.

7. Heat refined oil in a frying pan, place the tortillas with pickled cucumber next to each other. Fry on one side for 3 minutes on low heat.

8. After 3 minutes, turn the tortillas over to the other side and fry for a couple more minutes.

9. While the chicken rolls with filling are fried, make the sauce by mixing sour cream and water tomato paste. You can add any spices and spices to the sauce. Pour it into the pan, add a few bay leaves. Simmer over low heat with the lid closed for 30 minutes.

It often happens that there are food items lying around in the refrigerator: a little of this, a little of that, and a little of that :-) This time it happened to me the same way: 2 chicken breasts, half a sweet pepper, lightly fried champignons left over from making mashed potatoes, half a jar of pickles.
