Cooking process:

I take all the necessary ingredients to make cupcakes. I break cold chicken eggs into a deep container and beat with a blender or mixer until foam forms.


I begin to add sugar in small portions and continue to whisk the overall mixture. Beat eggs with sugar for about two minutes.


Then I pour condensed milk and odorless vegetable oil into the dough. Stir the dough until smooth.


I add baking powder to the dough before adding the flour so that it can be stirred with a mixer. The baking powder can also be replaced baking soda. This component must be extinguished lemon juice or vinegar.


Pour sifted flour into the dough and mix until smooth.


I grease silicone molds with a thin layer of vegetable oil. Then I pour in the dough, it fills more than half. I cut the plums into two halves and take out the pits. If I come across wormy fruits, I throw them away. In return I take good plum. I put half a plum in each mold.


I bake sponge cakes in tins in the oven for about 25 minutes at 180 degrees. I serve plum muffins with coffee, baked milk, and jelly.   1. Chicken eggs (it is recommended to take 2) must be thoroughly beaten with a glass of granulated sugar. The result should be fluffy foam.
  2. Then you need to add the remaining ingredients (2 cups of flour, 1/3 cup of milk, 10 grams of baking powder, a tablespoon of vanilla sugar, about 500 grams of plums), knead into a thick dough.

  4. The pie is baked at a temperature of 200 degrees. The optimal duration is 35-45 minutes. It is recommended to check readiness with a wooden stick.

Add the eggs one at a time, beating slightly after each.

Add cognac to the dough (and if you are baking for children, you don’t have to add it).

After sifting the flour into the dough, add baking powder and spices.

Stir and add pitted plums. If the plums are large, add a dozen or so; if small, maybe two dozen.

Mix the dough again and place it in a cake pan greased with vegetable oil.

I baked in a mold with a hole so that the dough, which contains a lot of juicy fruits, would bake faster and better. You can bake the cake in a simple round shape, or rectangular - in the latter case, baking time will be required.

Bake the plum cake at 180-190C for 45-60 minutes, depending on your shape and height of the cake. When wooden stick will remain dry when testing the cake at the highest point, and the crust on it will become golden brown and crispy - it’s time to turn it off.
