During the season, if you have a huge harvest of zucchini, be sure to prepare a couple of jars of this juice for future use - it will make your kids happy in winter.

To prepare this juice for the winter, you can use both young and overripe vegetables. True, from zucchini yellow color the juice will be the same, while fruits with light or green skin will give a pale drink (like a cucumber) - this does not particularly affect the taste. Vary the amount of granulated sugar as desired. By the way, I would additionally recommend using the juice (and zest) of 1 large lemon, thanks to which the drink will have a pleasant sourness.

(1.5 kilograms)(1 piece )(100 grams)

To prepare this homemade juice for the winter we need zucchini, orange and granulated sugar. I wrote about lemon above.

Wash the zucchini, dry it, cut off the edges. We cut the fruits themselves into pieces that will fit well through the neck of the juicer. I had medium-ripe zucchini, so I didn’t remove the skin and inside. Overripe vegetables should be prepared: cut off the very thick peel, remove the fibrous part along with the hard seeds.

Now we pass the zucchini pieces through a juicer. Depending on the power of the electric assistant and the juiciness of the fruit, the amount of juice may differ - I got 850 milliliters.

Don’t throw away the cake, because you can easily and simply use it to make delicious and very tender zucchini pancakes! Add to the cake 2 chicken eggs, a generous pinch of salt and punch everything immersion blender. After this, stir in 2-3 tablespoons of wheat flour and, if desired, chopped herbs or garlic. Fry the zucchini pancakes on vegetable oil on both sides until golden brown and serve them with sour cream - it turns out to be a delicious lunch or dinner for the kids.

Meanwhile, wash the orange thoroughly and wipe it dry. Using a fine grater, remove the zest - the most upper layer peel. This is the most aromatic part of the citrus fruit. Just don’t get caught in the white layer - it’s what’s bitter and can ruin the drink. If you decide to add lemon, do the same with it.

Squeeze the juice out of the orange using any convenient method. To make it come off faster and easier, heat the fruit in the microwave on high for 15 seconds. high power.

Add the juice and zest of the orange (and lemon too, if using) to the squash juice. Bring everything to a boil and cook over medium heat for about 3-4 minutes.

You first had to sterilize the dishes - I do this in the microwave, but you can do it in any way convenient for you (in the oven or on the stove). Wash the soda jar thoroughly or detergent, then rinse in cold water and pour about 100 milliliters of water into it. Place in the microwave and steam at the highest power - 5 minutes is enough for a liter jar. I simply wash the lids, put them in a saucepan, pour in water (so that the lids are completely covered) and boil for about 5 minutes. Pour boiling zucchini juice into the prepared jar, not reaching the edge of the dish a couple of centimeters - from the specified amount of products you get exactly 1 liter of drink.

Such familiar zucchini can bring surprises. There is probably no person in the world who has not tried squash caviar at least once. Many housewives cook “zucchini like pineapples,” and this suggests that there is a lot we don’t know about zucchini. In particular, about the fact that you can make juice from zucchini for the winter.

Young zucchini consists of 95% water, which means they can be used to make a healthy drink for the winter. Of course, zucchini itself is not very tasty, but it is so healthy that it’s worth racking your brains and thinking about how to make zucchini juice tasty. There are fasting zucchini diets, however, you shouldn’t get too carried away with it. The daily dose of zucchini juice should be no more than one glass, otherwise you may get an upset stomach.

To make tasteless zucchini pleasant, it is better to take berries and fruits that have a sour taste, and a stronger and stronger one, as “partners” for zucchini. pleasant aroma. Seasonal fruits can be apples or cherries. If nothing is ripe yet, you can add oranges or lemons to the squash juice.

There are zucchini different varieties, size and color, but this is not important for making juice. Main criterion selection is the degree of maturity of the zucchini. Young zucchini, or even slightly unripe ones, are juicier and more healthy. The pulp of old zucchini is more like a sponge and you will have more waste than juice.

Wash the zucchini, trim the tail, and cut into small pieces. If the zucchini is very young, you don’t have to peel the peel.

Squeeze the juice out of the zucchini using a juicer. This is the most convenient way, and losses in this case are minimal.

From 1 kg of young zucchini, approximately 900 ml of juice is obtained. For this amount of zucchini juice you can add:

  • juice of 1 lemon/orange;
  • 100 g sugar;
  • vanilla to taste/optional.

Pour the zucchini juice into a saucepan and add lemon juice and sugar. Boil the juice for 5-7 minutes over low heat.

Zucchini juice should be rolled up like regular juices. Pour the hot juice into heated sterile jars and seal them with lids. Cover the jars with a blanket to slow down cooling, which replaces pasteurization.

Storing zucchini juice is not difficult. It, like your other products, will last up to 12 months in a room where the temperature is not higher than +18 degrees, without sudden changes.
