When heated, polyethylene begins to release harmful compounds directly into the prepared dish.

Important: For this recipe, use only special heat-resistant baking bags.

Otherwise, all the usefulness of the recipe will come to naught.

So, having packed our egg product in a baking bag, tie it well and place it in a pan of boiling water.

The package will float there, gradually its contents will cook and we will get a very soft, dietary product.

The same method is used when preparing an omelet in a jar.

All ingredients are placed in jars. We do not pour completely, i.e. the contents will rise as they harden.

For some reason, the omelette from kindergarten remains in my memory - tall, elastic, juicy, with a delicate crust, fragrant and rosy. No matter how much we cook, no matter what recipes we take as a basis, an omelette in the oven turns out best.

Before you cook an omelette in the oven, you must remember: you must strictly follow the proportions indicated in the recipe, open the oven only after the cooking process is completed, otherwise the fluffiness will disappear and you will get a thin flatbread. The ideal temperature for cooking is 190-200 degrees.

Baking time depends on the volume, on average 25-30 minutes.
Some cooks (and sometimes professional chefs) it is recommended to add soda and flour. They're lying. Shamelessly. No soda, no flour! The main thing here is the ratio of milk and eggs. If for a serving of a regular omelette, which is cooked in a frying pan, a couple of eggs and two tablespoons of milk are enough, then in order to prepare a fluffy omelette in the oven, you will need much more milk. And you don't need to beat them until foamy. in kindergartens? Mix milk and eggs thoroughly. Just imagine: two hundred eggs and 10 liters of milk. And all this is whipped with a mixer? No. Mix thoroughly. Believe me, your omelette in the oven will not suffer from this. And there... See for yourself.
To prepare six servings, take 10 large eggs, 330 ml of milk, salt (1 teaspoon), 70 g of butter (butter).

Turn on the oven (let it warm up for now). Grease a frying pan (or pre-prepared molds) with oil. Pour the milk into a deep bowl. Add salt and eggs. Stir thoroughly. Pour this mixture into a mold and place it in a preheated oven. Baking time - 30 minutes exactly. The omelette, cut into portions, grease with oil and sprinkle with chopped parsley (this is not an acquired taste).

Now for some little tricks. To make an omelette in the oven successful, the form should be filled no more than 1/3 full. Fairy tales that when baking the volume increases several times are very far from reality. It's really increasing. But very little. The omelette in the dining room was high for one simple reason: there were a lot of people, but there were few “moulds”. And they use large baking trays there. After all, these are not several servings for a family. There are at least 200 people in the dining room, and it is cooked on 5-7 baking sheets, so it was poured, as they say, “to capacity,” more, and therefore higher.

The omelette always falls off. And this doesn't mean you did anything wrong. The temperature in the oven is not uniform. At the door, for example, it is always lower. Even if your oven is super-modern, has a fan and a special internal coating, the edges are always fried first, and only then the middle, which falls off. By the way, the omelet in the dining room also falls off. It’s just that masterful chefs manage to cut it in such a way that it’s not noticeable to the average person.

Stories that a real omelet turns out high and never sinks are not true. Need good volume? Choose a shape that is narrower and has high sides. And keep the proportions and

Omelette in the oven belongs to the category of dietary dishes that are allowed for frequent consumption. It's really both tasty and healthy. And various additives and options will help you diversify your menu. I recommend trying greens, an omelette with cheese and butter, an omelette with tomatoes and chopped. Ideally, you need to add ingredients that are not included in the main composition after cooking, otherwise the omelette will definitely settle. For example, coarsely grated cheese is sprinkled on top of a still hot omelette. It is advisable to serve vegetables as a side dish.

Enjoy your meal!

A fluffy omelet like in a kindergarten in the oven

When we went to the garden as children and they gave us a tender and uniquely tasty omelette for breakfast, we, of course, didn’t think about how it turned out that way, but simply gobbled up the airy delicacy on both cheeks. But now, when we are already taking our children, and even grandchildren, to the kindergarten, thoughts increasingly arise: how do cooks in children's institutions manage to prepare a magnificent omelette in the oven so that it does not fall off when serving? In fact, there are no difficulties here, and don’t even think about adding yeast or soda, it all depends solely on the right combination and product ratios.

Ingredients

  • chicken eggs – 2 pcs.;
  • milk – 0.5 cups;
  • butter – 15 g;
  • salt - to your taste.

Preparation

  1. In eggs, separate the whites from the yolks. Combine the yolks with milk, add salt and mix until smooth.
  2. In a separate bowl, using a kitchen whisk, beat the egg whites until stiff.
  3. Add the whipped whites into the milk-yolk mixture in small portions and mix gently.
  4. Take a baking dish and grease it with a thin layer of butter (do not use too much butter, too much may prevent the omelette from rising well). Pour the omelette mixture into the mold. By this time the oven should already be preheated to a temperature of 200 degrees. Open the door, reduce the heat a little and place the omelette pan in the oven.
  5. After 30 minutes, the omelette in the oven will be ready, just like in kindergarten.

Fluffy omelet with additives

If you add a variety of fillings to the omelette, it will turn out even tastier and more satisfying. This dish can be fed to a hungry child after school, or to a husband after a working day.

For example, a good option with sausage, tomatoes and onions.

Cut the sausage, onions and tomatoes into small cubes. Heat vegetable oil in a frying pan, add onion and fry until golden brown. Add the tomatoes, fry a little until they start to release juice, and now add the sausage pieces. Stirring occasionally, fry everything together for 6-7 minutes.

Grease a baking dish with butter and transfer the prepared filling. In a separate bowl, mix milk with eggs and salt, fill the resulting mixture with the contents of the mold and place in the oven, preheated to 200 degrees, for 30 minutes. Look through the oven window; as soon as a golden brown crust begins to appear, the fluffy omelette with filling is ready.

Instead of sausage, you can add mushrooms or seafood to the filling.

And if you add sweet ingredients (granulated sugar, vanillin, citrus zest, raisins), you can get an amazing omelet dessert.

  • To obtain a tall, fluffy omelette, it is better to use a high, but not wide, shape.
  • To prevent the dish from burning during cooking, do not use metal baking dishes, use glass or ceramic ones (they heat up more slowly and the omelette mass is baked more evenly in such dishes).
  • Do not buy skim milk for making omelettes; the product must be whole.
  • After the mold is greased with butter, you can sprinkle its sides and bottom breadcrumbs. This will make the dish more appetizing and tasty.
  • Never beat the omelette mass with a mixer, do it only by hand, then you will get a porous and airy structure.
